It’s been some time since our last update, but so much has happened! First off, we are FINALLY licensed and permitted to brew. We want to remind everyone that we are just a two person operation (Brian and Mary Rooney) and it will take us some time to build up enough capacity to open our tasting room for draft pours. While we do have a 3bbl brewing system (produces approx. 90 gallons of beer p/batch / 720 pints per batch), we both have full time jobs that only permit us to brew on the weekend and package/prep during week-nights. The last thing we want to do is open our tasting room and not have plenty of variety available (we have 8 taps) and capacity to serve. Until we build up proper capacity (kegs of our beer in our walk-in cooler), here’s our “soft opening” plan to get our beer out to everyone:
- We will be selling cans and bottles of our beer, to-go, from our tasting room. If you follow our Facebook or Twitter feed or signed up for our emails, we will announce release dates/times when the beers are ready for purchase. We hope to do at least two can/bottle release events each month.
- We are also planning ticketed tasting events on a few Saturdays each month. We will have 50 tickets available for each tasting session and potentially last minute additional tickets available if the weather is nice (we can accommodate additional guest on our patio). The format will be a 1 hour social with a 1 hour tasting session. For the social hour, we will have a beer on tap for as many pours as you care to purchase. During the 1 hour tasting session, we will lead you through several pours that are included in the ticket price. And finally, before you leave, we will send you home with a 22oz bottle or two 16oz cans of whatever beer we are releasing that week. We will also offer discounts on merchandise (branded hats, t-shirts, glassware, etc).
- Once avaialble, the Tasting Room page on our website will have details, dates, and times for can/bottle releases and availability of tickets to our tasting events.
We plan to start soft opening events in mid/late October. We are excited to announce our first beers that will be available for to-go purchase. The first one is Rockhill & Locust, which is our English mild ale. For this particular batch, we’ve collaborated with Oddly Correct Coffee Roasters and will be adding a carefully selected coffee to complement the caramel, nutty, earthy, and chocolate notes of this beer. The second beer we will have available is our Northeast Style IPA, Counterculture. For this particular batch of Counterculture, we are adding huge dry hop additions of Citra, Mosaic, and Simcoe. Beers we have on deck for release after that are Holstein (our milk stout), Grand (our NE style pale ale), and Vacation Island (our session sour ale).
